What’s in NOC’s Famous Chattooga River Two-Bean Hummus?

What makes NOC Chattooga River Rafting Trips so special? Is it the exciting Class III-IV rapids? The untouched, serene wilderness setting? Well, it is all of that – plus our famous two-bean hummus! 

 

If you have been on an NOC Chattooga River Rafting trip you know one of the trip highlights is our riverside lunch complete with our delicious two-bean hummus. After paddling technical and adventurous rapids like Bulls Sluice and the renown Five Falls, guests, vegetarians and otherwise, love to refuel. Loaded with fat-free protein to keep your energy up, our hummus is a peppery spread perfect for a sandwich or dipping with carrots, celery and crackers.

And now you can make it at home! This recipe makes enough for 6-7 raft trips. The Chattooga Chef recommends using Number 10 cans of beans, rinsed.

I. In food processor, pulse:
a. 1/2 an onion
b. 3 Tablespoons garlic

II. Add the following ingredients and pulse:
a. 4 Tablespoons lemon juice
b. 1 teaspoon black pepper
c. 1 teaspoon salt
d. 1/2 teaspoon cayenne pepper
e. 2 teaspoons cumin
f. 1/4 cup parsley

III. Add the following and pulse again
a. 2/3 can black beans
b. 1/3 cup garbanzo beans
c. 1/3 cup tahini

IV. At this point, pulse to the desired consistency. You can add in some of the black bean water if the mixture is too thick – but remember, too thick a consistency is not good.
